How to prepare
In a cocktail shaker, combine gin, raspberry simple syrup, lime juice, and coconut water.
Fill the shaker with ice and shake vigorously for about 10–15 seconds until well chilled.
Fill a highball or Collins glass with ice. Strain the mixture into the glass over the fresh ice.
Top with ginger beer, giving it a gentle stir to combine.
Garnish: Add a few fresh raspberries, a lime wheel, or a sprig of mint for a refreshing finish.
Raspberry Simple Syrup Recipe
1 cup fresh or frozen raspberries
1 cup granulated sugar
1 cup water
Instructions:
In a small saucepan, add the raspberries, sugar, and water.
Place the saucepan over medium heat. Stir occasionally to dissolve the sugar as the mixture begins to warm up.
Once the sugar has dissolved and the mixture is warm (but not boiling), reduce the heat slightly and allow it to simmer gently.
Let it simmer for about 5–7 minutes, stirring occasionally, until the raspberries break down and the syrup turns a deep pinkish-red color.
Remove the saucepan from the heat and let the syrup cool for 5–10 minutes.
Place a fine-mesh strainer over a clean glass. Pour the syrup through the strainer, using a spoon to press down on the solids to extract as much liquid as possible.
Let the syrup cool to room temperature before using it in your cocktail.
