Tropical Fish Ceviche

Ingredients

  • 1 lb fresh snapper or corvina, cut into ½-inch cubes
  • ½ cup fresh lime juice (about 4 limes)
  • ½ cup Vita Coco Juice (original flavor)
  • ½ cup pineapple, finely diced
  • 1 ripe avocado , finely diced
  • ½ small red onion, finely diced
  • 1 jalapeno pepper (seeds removed) , finely diced
  • ¼ cup fresh cilantro, chopped
  • 1 tsp sea salt, plus more to taste
  • Chifles plantain chips, for serving

How to prepare

  1. Place the cubed fish in a large mixing bowl.  Pour in lime juice and Vita Coco Juice, tossing to coat evenly.  Cover and refrigerate for 20–25 minutes, or until the fish turns opaque.
  2. Drain off about half of the marinade.  Gently fold in pineapple, avocado, red onion, jalapeno, cilantro, and salt.
  3. Taste and adjust the salt and lime juice as needed
  4. Serve immediately with crunchy Chifles plantain chips on the side
