How to prepare
Run a lemon wedge around the rim of a glass. Dip the rim into a small plate of Tajín seasoning. Set aside.
In a shaker or large glass, whisk together the tamarind concentrate, coconut water, lemon juice, and ginger simple syrup until the tamarind fully dissolves.
Fill the rimmed glass with ice and pour in the lemonade mixture.
Garnish with a lemon wheel or a piece of candied ginger.
* Ginger Simple Syrup Recipe
Ingredients:
1/2 cup fresh ginger, peeled and thinly sliced
1 cup granulated sugar
1 cup water
Instructions:
In a small saucepan, add the sliced ginger, sugar, and water.
Place the saucepan over medium heat. Stir occasionally until the sugar is fully dissolved — this should take about 2–3 minutes.
Once the sugar is dissolved, reduce the heat slightly and let the syrup simmer gently (not a full boil) for about 10–15 minutes. The longer it simmers, the stronger the ginger flavor will be.
Remove the saucepan from heat and let the syrup cool for 5-10 minutes
Once cool, strain the syrup through a fine mesh strainer into a clean jar or bottle. Discard the ginger pieces.
